Lunch Pick: A healthy (but delicious) salad from Village Juicery

We’re big fans of eating gussied-up plants for lunch. Fortunately, Village Juicery is making it even easier to stick to your raw and organic guns. With three locations around the city — the latest is at Yonge ’n’ Eg — this juicery also dishes out lunch-worthy salads that defy its name.

Our choice is (naturally) the Plant Protein salad ($14), which pretty much has it all. A rainbow of 100 per cent organic ingredients are housed in a compostable bowl, running from broccoli to carrot to curried cauliflower to cashews for some crunch and a hint of sweetness. There’s more: baby arugula, hemp hearts and sesame seeds. Finally, quinoa, lentils and sprouted chickpeas help bulk the affair up and will make sure to tide you over for the work day.

Pair with some maple-tahini dressing and one of those namesake juices — the Be Radiant (pictured above, $8 for 250 ml) comes with carrot, sweet potato, lemon and turmeric. Plus, they’ll take the bottles back for a refund!
