Drink This: the Sparkling Sue from WEST

Back in 2001, WEST was one of the first spots to transform King West from condoville into a nighttime destination. After a good run, the bar shuttered its doors and turned into Cobra before Glen Baxter and some of the original founders decided to resuscitate WEST this May. Being of a certain age and residents of the ’hood, the group wished for a local haunt that would appeal to their friends, with food, drink and space for dancing, should the need arise.  

Fittingly, the subterranean space has plenty of links to Canuck fashion. Photographs from fashion snapper Babar Khan line the walls and the staff is outfitted in Joeffer Caoc garb. “We support Canadian fashion!” says Baxter. The cocktail selection is equally stylish.

Bartender Dani Doucette crafted the Sparkling Sue for one of the owners, whose nickname is Champagne Sue due to her love of the bubbly. Pear Grey Goose vodka and St. Germain are stirred on ice and topped with rose prosecco, key lime zest and a sliver of Asian pear. The light and summery tipple is perfect for swilling on the back patio, with the St. Germain becoming more prevalent as one works their way down the drink.

But don’t be deceived by its lighthearted nature. “It kicks you in the butt!” laughs Doucette.
