Too Close to Call: I Love Lasagna and Chimney Stax are two food trucks to watch

This spring, two of T.O.’s hottest food truck combatants are hitting the streets, making roadside diners salivate at the thought of sweet Chimney Stax pastries or savoury lasagna.

Our family has been in the food service business for over 30 years, and people adore our lasagna, so we decided to take it to the streets! Why food trucks? We were so blown away when we first tried this Austrian treat we wanted everyone to try one! The truck was the best way to bring Stax to the masses.
Everyone loves lasagna and it’s under utilized in many Italian restaurants. It can be as versatile as any other food truck item, and the combinations of pasta, meat and vegetables are endless. Why specialize in this specific food truck item? Since Matt had his first taste of a Stax at a winter market in Austria, it was perfectly clear as to what the culinary goal was going to be. That being said, we love “truck life”!
Our wild boar with spinach pasta is very popular at the moment. Our tried and tested recipes have been passed down through generations! What is the most popular item flavour on the menu? The classic Cinful Stax (cinnamon sugar)! It’s one of the classic flavours from eastern Europe. It’s the “godfather” of the Stax family.  
Being able to bring this authentic Italian experience anywhere, it gives people the option to enjoy restaurant-quality pasta without the wait, and it’s healthier than a burger and fries! What is the advantage of tapping into this unique food truck experience? People who love to eat at food trucks generally love to try something different and indulgent. Hand-rolled, rotisserie-baked bread is definitely something new, and everyone loves variety.
Our first day of operation, we were nervous, but all the trucks were so supportive, making us feel like part of a culture rather than a business. Most memorable food truck moment? When the audience at Field Trip music festival voted Chimney Stax as the “fan favourite,” and we were given a blue ribbon!
